For this cheese’s production we use only 100% regionally produced, non-silage goat’s milk. The milk is processed with a lot of craftsmanship to become this goat’s speciality. During its ripening, it’s flipped regularly and slathered in wine yeast. That’s what gives this cheese its unique yeast smack, rounded by the pleasantly mild goat aroma.
