A creamy cheese, this organic cheese is medium to mature with a full-bodied aroma. In summer the lush Alpine meadows with their herbs and grasses give the milk a unique and traditional flavour. In the Stofel cheese dairy the cheese is made from fresh milk in copper vats using traditional methods and the wisdom of generations. The cheese makers use their instinctive skills to turn the fresh, untreated milk into this fine Swiss mountain cheese, which is a firm favourite with cheese lovers thanks to its typical, tangy aroma. The cheeses are then ripened for several months in the cellar. During this time small holes form along with the occasional crack. Each individual cheese receives daily attention, as it is brushed with a briny mix. This forms the smear-ripened rind, which speeds up the ripening process and gives the Swiss mountain cheese its typical aroma.
